Veggie Hummus Wrap Recipe

We want to share with the blog world simple recipes that we've made while on our journey to give others ideas on creating healthy meals while camping, traveling, or just cooking at home. So here is recipe number one... the protein packed veggie hummus wrap.

Ingredients (makes 3-4 servings):
1. One small head of cabbage
2. One lemon
3. One small red onion
4. One avocado
5. One tomato
6. Your favorite flavor of hummus
7. Pita bread, wheat tortillas, gf peeps try a large lettuce leaf to wrap
8. Salt & pepper

Chop your cabbage, onion, avocado, and tomato. Slather a healthy portion of hummus on your carb of choice, place your veggies on top, spritz it all with some lemon, and sprinkle on a little salt and pepper. Simple, healthy and quite delicious!

Feel free to get as creative as you want with the veggies. Other goodies we would like to incorporate someday (and when they are on sale) include beets, carrots, sprouts, and cucumber.
